    Tom and I are “almost” vegetarian…we still eat chicken and turkey and fish two-three meals a week. I love not eating so much meat. And as Kafka said “Now I can look at you in peace; I don’t eat you any more.”

    I am making lentils and rice (Lebanese Mjadrra) and Spanish coleslaw that we always ate growing up…really easy and filling and cheap!

    I have been a vegetarian for a little over a year. I am the only vegetarian in my family, but I would never go back to eating meat..

    That is great, DM. I was a vegetarian for a year when I was younger. I honestly do not know why I started eating meat again. I felt better than ever. And I did not feel the guilt that I feel when I eat meat.

    I’m not sure who tagged this thread as vegan. It is vegetarian day…no animal flesh. Eggs and dairy are still fine.

    Eat more vegetarian meals:

    It will not only be better on your pocketbook, but according to a recent report by the United Nations, if every family in the US ate one more vegetarian meal a week it would save as much fossil fuel as taking 5 million cars off the road.

    If Americans reduced their meat consumption by only 10 percent, it would free 12 million tons of grain annually for human consumption. That alone would be enough to adequately feed each of the 60 million people who are forced to live without ample food every year.
