    Good evening all!!!
    My neighbor gave me 4 white Japanese eggplants tonight…. What to do with them? I have NO idea….. They are long and skinny like banana shapes. I looked up recipes. The only way I ever had eggplant (purple ones) was sliced, breaded…fried in oil (not an option anymore) or breaded, then baked with spag. sauce and mozz. cheese on top. That’s how I will probably do them. I wonder if they freeze well like that? AV??? Neighbor plans to give me more as they grow….
    KZ… How adorable your precious little Avery was calling “Nana, Nana” this afternoon… SO cute! She isn’t used to being away from you for so long…. Awwwww… cupcakes sound cute! Wow, can’t believe it has been a whole year already since she was born! Is she walking all over the place now?
    KJ… how exciting that your cat blanket arrived!!!! 🙂 Nice the $15 S/H fee has been waived as well for you!
    ECB… Thanks for sharing the yummy sounding Cinn. roll/cake recipe. Will write that down….

    Good evening all – enjoying some of Avery’s birthday cake and ice cream the cyber way. Hope Avery had a fun birthday!
    KJ, that bedspread is so cool! Nice throw cushions too.
    Found me a walking buddy – neighbor on the other side of the lake walks her dog around the same time I’m over there so we met up and walked some more. Her elderly goggie can’t handle the hills so he stayed home. We wandered over to my side of the lake and explored a few dead end streets. Wound up at my house where Comet showed off, Leela was polite, and Mac ran and hid.
    Love these summer nights, when the crickets outside my window battle it out to see who is the loudest.

    BB, i believe if you slice and blanche (drop in boiling salted water for 3 min) then seal tightly in a plastic freezer bag, they should keep well ….. Like summer squash. Or you could bake them in lasagna and freeze that prior to baking, it should work well. Any recipe you would make with yellow squash should work for this. Also google some chutneys, I think that would be good. Let us know what you do with them!

    Had a great day with Mr. AV and Dau today …. We went to the casino, played a few games and had dinner …. Came home $100 up 🙂
