NO DOUGH PIZZA!!!!!!! This one is a WINNER!!!! Gluten Free, Low Carb, Diabetic Friendly!!!!!! For when you absolutely want pizza but not all the carbs!!!!!!!

Crust 1 (8 oz) package of full fat cream cheese, room temperature
2 eggs
1/4 tsp ground black pepper
1 tsp garlic powder
1/4 cup grated parmesan cheese
Topping 1/2 cup pizza sauce
1 1/2 cups shredded mozzarella cheese toppings – pepperoni, ham, sausage, mushrooms, peppers Garlic powder
Preheat oven to 350.
Lightly spray a 9×13 baking dish with cooking spray.
With a handheld mixer, mix cream cheese, eggs, pepper, garlic powder and parmesan cheese until combined.
Spread into baking dish.
Bake for 12-15 minutes, our until golden brown.
Allow crust to cool for 10 minutes.
Spread pizza sauce on crust.
Top with cheese and toppings. Sprinkle pizza with garlic powder.
Bake 8-10 minutes, until cheese is melted.

Just finished putting together stuffed shells for dinner. Leela is hibernating, wish I was her! I was standing in front of my wood burner talking on the phone when Comet decided to use my legs as a scratching post, ouch! I think what he really wanted was for me to move because I was blocking ‘summer’!
Would be nice to have something to look forward to – this week is looking to be the pits – arctic air, cold, polar, etc. Years ago I used to go to a resort in the Catskills (New York State) with a friend and her family for the last weekend in January. Lots of winter there too, but we were teenagers, the food and accommodations were spectacular, and there were often famous people there. (Miss America, The New York Jets) Pictures of famous people lined the walls in the hallways.
Anyway, guess I will have to work extra hard to make my week bright!

Here too, weather dismal. Thought it was just me, but other peeps saying the continual cold is wearing them down physically/emotionally, not the worst thing by far, but walking in bitter cold takes a bit out of you. Today got my warmwear out, long-sleeved cami made of something or other, real warm. And thick tights, and near thigh-high lined boots, you get the drift (pun intended). Cat napped with Dorry this pm, kits are smart about getting proper rest, not that I’d want to be asleep quite so many hours. Purrhaps I tired both of us out when playing with his new red feather toy, who knows. Now I need me a hot flavoured coffee bev while I watch the snow and TV simultaneously. Not likely L8R, but tomorrow.

Deb, that story about Kiki kitty, so heart-wrenching what she had to go through, but at least most of her life was spent in a loving home and hopefully that made up for her horrifying early years.

Hope you feel better soon. Like this kitty who seems to be on the mend.
