    Do you have a fave veggie or veggie recipes? Please add for yummy sharing!

    I enjoy steamed cauliflower with smidge of butter, garlic, ginger & curry!

    Good idea for a continuing thread JK. I don’t have a recipe right now, but I will definately find some. I love pumpkin and autumn veggies, and I was planning to cook Beef In Costume one of these days since the weather is getting cooler. But Beef In Costume is not a veggie recipe. Bring on the autumn veggie dishes !

    Oh I love my veggies! I love nekkid or with a bit of butter. I’m so lucky I enjoy my veggies. Raw and cooked I just love ’em all (okay, maybe not Okra – and yes, I’ve tried it!)

    Sometimes, MC, disguising them till you get used to them. Just like they do with kids! Grate some carrot into a homemade muffin (bran or oat – not sure I’d like carrot in corn), or put some butter on them, or my fave – CHEESE! I make a mock potato thing (when I’m doing Atkins right) with steamed cauliflower (I also add broccoli), smash it up and put some cream cheese, spring onion (scallion) and the real bacon bits from Hormel (or make your own) and then bake it at 425 for about 45 minutes till it’s nice and bubbly. MMMMM good!

    ETA: I also sometimes add cheddar and top with parm, whatever cheese you like.

    Quick and easy vege dish is part cook cauliflower,broccoli,zucchini,Brussels sprouts,(use any one or a combination of any) then place in an oven dish and pour over a cheese sauce(packet or homemade) top with breadcrumbs and grated parmesan and into an oven at 350F for 20 minutes until bubbling and golden. my version of the old favourite cauliflower cheese. Also check out vegetable au gratin recipes, easy and very tasty. Frittatas are also a great way to have vegetables.

    Pretty simple and quick idea:

    Already prepared broccoli soup, add more steamed broccoli, carrots, diced potatoes…voila you have veggie porridge! Season as you like, serve w/crusty bread & butter and chunk of cheese…hey, Martha Stewart doesn’t live near me so this is it!

    Brussel sprouts and cauliflower are the devil’s vegetables. Otherwise, I like them all. Which is handy seeing as I’m a veggie….

    Don’t have any links really but our fav way to eat veggies is to grill in the summer and roast in the fall/winter. Just about any veggie is good that way and both methods are pretty simple. I just cut them up, toss with a little olive oil and seasoning (salt, pepper, garlic powder, lemon pepper, etc) and then grill in a basket or broil. Both are simple and healthy since you are not adding much to the veggies. Grilled broccoli is one of our favorites. I got that from Allrecipes. I’ve recently found out that I feel much better when I eat gluten free so veggie sides have become more frequent in our meals.

    Oh yes! Roasted veggies are great, makes them SWEET! Root veggies especially like carrots, beets, parsnips… mmmmm!

    Veggies are my favorite food!………… I love the au gratin receipes, the love the butter bean field peas and blackeyed peas, love the sauteed asparagus and green beans or fresh cut carrots…….. love the root veggie mashes…..love them in stews, chili, gumbo………can’t eat enough and can’t inventing new ways to make them 🙂

    I wonder what veg would come out on top if we ran a contest. My bet is it would be between tomatoes and broccoli as both are so useful in lots of preps. Here’s one of my favorite combos. I’m sure you’ve all seen various versions.

    Bag of frozen mixed broccoli, carrots, and water chestnuts

    2 cans of cream of mushroom soup

    big block of velveeta cheese (your choice of size)

    Steam or boil the vegs (please, leave crisp!)

    meanwhile melt the cheese and soup together

    mix, put in casserole dish and oven to heat through until bubbly

    I love the crunchiness of the veggies, and the creamy gooey goodness of the velveeta, homely “cheese” that it is.
