Ditto Kilroy – so funny that you, me and Rubia are all out there within weeks/days of each other! That would have made a great TDK meet!

Now, running seriously late, but with good reason – have to go, back on later.

    Byeeeeeeeeeeeeeee!!

Whoo Hoo for MCW!!! That really is great news! What a relief!

Poor Mr. Rubia. He’s booked our trip for 18 people, and so has also arranged for a small coach to transport us to and from the airport. He’d been hoping that he would have something definite to tell them about any changes in times, etc., but he finally had to call them today just to let them know what was going on with us and that everything was up in the air.

Aw, CM, you care. {{{Hugs}}} It’s all right, it’s not 2 am yet… lol. Please don’t worry, I am going to bed as soon as the clock strikes two (about five mins). I know, I meant to be in bed by 12 but you know, I hardly ever am. PLEASE DON’T WORRY. Fishie might get agitated!

Good morning to those who came to the cafe after I left earlier. Glad to hear, MWC, that you finally got things straightened out for your trip! Everyone else, have a great day; have to get some more work done. (And thanks for all the good wishes on my toothache. It’s just a dull ache right now, but I have to be very careful not to bite down on that side.)

I don’t have a crockpot but this recipe was in my email from the food channel. It sounds so good for fall! And the reviews were all good, except for one person said that the liquid overflowed the pot onto the counter. Maybe not a big enough crockpot?

    Slow Cooker Chicken Chili

    From Food Network Kitchens

2 pounds ground chicken, coarsely ground preferred

3 tablespoons chili powder, plus 2 teaspoons

1 (15-ounce) can kidney beans, drained and rinsed

1 (15-ounce) can white beans, drained and rinsed

2 (28-ounce) cans diced fire roasted tomatoes

1 medium sweet potato (about 10 ounces), peeled and shredded

    1 (15-ounce) can low-sodium chicken broth

1/4 cup instant tapioca (recommended: Minute tapioca)

1 to 2 chipotle chiles in adobo sauce with seeds, chopped

    2 tablespoons soy sauce

    1 tablespoon kosher salt

    1 tablespoon onion powder

    2 teaspoons granulated garlic

    1 teaspoon dried oregano

    1 teaspoon ground cumin

    1/4 teaspoon ground cinnamon

    Pinch ground cloves

    1/2 to 3/4 cup lager-style beer, optional

Toppings: Sour cream, shredded Cheddar or Jack cheese, chopped scallions, and chopped pickled jalapenos

Put the chicken in the slow cooker. Add 3 tablespoons of the chili powder and all the rest of the ingredients, except the beer. Stir everything together, cover, and cook on LOW for 6 to 8 hours.

Just before serving, stir in the remaining 2 teaspoons of chili powder, the beer, if using, and season with more salt and pepper, to taste, if desired. Divide the chili among warm bowls. Serve with the topping of your choice.

Know-How: Stirring in chili powder right before serving brightens the flavor of the chili.

Hey Kilroy, I felt that “Rent” was an awful show. I didn’t particularly care for “Cats” or “Les Miserables” either.

Now “Spamalot”…..I loved. ๐Ÿ™‚ Also “The Producers”

Our local venue is getting a Beatles revival band “Rain” in Februaru 2009. THAT looks good. Saw the group on public tv and if I didn’t know better, I’d swear I was seeing the Fab Four.

That sounds so yummy WWM! I KNOW it would over-flow my cooker… it’s quite small.
