    LOL at PG’s pics especially the penguin one. Oh and staring at one of the pics too.
    Just had HRH walk across my laptop 3 times and after that last time my screen was showing everything sideways. 😯
    Had to call Airy my Techxpert, got it swapped around 180 and then back to normal. How on earth does a cats paws manage to do what HRH did! !
    Outside temps are dropping to almost zero C tonight and I haven’t got any wood inside and I’m not going to get any as carrying it hurts my legs too much lately. Just layer on the clothing and wrap a blanket around my legs.
    HRH is doing her sitting in the middle of the coffee table act again just so she is the centre of attention.

    MMM, lasagna! Probably Mr. KZ’s favorite food–that, and pizza! Brrr, MS sounds cold at your house, wish we could blow some of this heat your way, but if we could it would probably make snow!

    Good morning, mmmm, lasagna! Going to the store today, I might pick up some mozzarella and ricotta. My lasagna is usually meatless with cheese and tomato sauce, or it’s a veggie one with mixed veggies and alfredo sauce.

    ….. glad I don’t have to go anywhere today, cause the steam pit I live in promises more storms firing up for this afternoon ….. my fishie pond is so full, it’s a miracle the fish are still in there, cause the last few afternoons, I could swear they could have rode the streaming rain water right down to the bayshore! ….. Hump day best get started for me, lots to do! have a great one all, check you guys later ….

    This is my fave lasagna –

    12 whole wheat lasagna noodles, dry
    1 teaspoon olive oil
    2 tablespoons olive oil
    3 cloves garlic, minced
    1 eggplant, cubed
    1 (28 ounce) can Italian herb-flavored tomato sauce
    1 cup part-skim ricotta cheese
    1 cup low-fat cottage cheese
    1 cup shredded part-skim mozzarella cheese
    1/4 cup shredded Parmesan cheese
    1/2 teaspoon salt
    1/2 teaspoon ground black pepper
    1 egg
    2 1/2 cups frozen chopped spinach, thawed and squeezed dry
    Step-by-step ViewDirections
    1. Preheat oven to 375 degrees F (190 degrees C).
    2. Bring a large pot of water to a boil.
    3. Drop lasagna noodles into water and add 1 teaspoon of olive oil. Cook until noodles are tender but still slightly firm, about 8 minutes.
    4. Drain water from the noodles and let cool.
    5. Heat 2 tablespoons olive oil in a large skillet over medium heat.
    6. Cook and stir garlic and eggplant chunks until eggplant is partially cooked, about 7 minutes.
    7. Pour tomato sauce into the skillet and simmer until eggplant is tender, 10 to 15 minutes.
    8. Combine ricotta cheese, cottage cheese, mozzarella cheese, Parmesan cheese, salt, black pepper, and egg in a bowl.
    9. Mix spinach into ricotta cheese mixture.
    10. Spread a layer of tomato sauce mixture into the bottom of a 9×12-inch baking dish.
    11. Place 4 noodles on top of the sauce, overlapping if necessary.
    12. Spoon 1/3 of the remaining tomato sauce over noodles.
    13. Spread 1/3 of the ricotta mixture over the tomato sauce
    14. Repeat layers twice more, starting with noodles and following with sauce and ricotta mixture.
    15. Top the lasagna with mozzarella cheese.
    16. Bake in preheated oven until the ricotta filling is set and mozzarella cheese topping is lightly browned, 45 minutes to 1 hour.

    my lasagna recipe is very similar to yours, except I never thought to put eggplant and spinach in it. and I put sweet Italian sausage in it. that is a very hearty and tasty recipe. thank you.

    Sure hope your fishies don’t ride down to the bayshore, AV. We could use some rain here – many of threatening days of rain resulted in little to none this month. It’s another scorcher here.
    PG, that looks like a tasty lasagna recipe, I’m gonna save it. Almost forgot, I like to make spinach lasagna too, though haven’t made it in a while.
    MS is sure to appreciate that virtual fire – we must remember it for when it’s freezing here!
    Had a bit of a hiccup licensing the cats. I went up to town hall because I needed to register Mac, but the vet didn’t check the box that indicated he’s neutered. With his tipped ear I assumed he was neutered, and that the vet verified it when I first brought him in last year. So the ACO called the vet and after about a ten minute wait, they verified it. His tipped ear is a clean tip, was not lost due to frostbite, and tipping the right ear goes hand in hand with spay/neuter as part of the TNR program. Anyway, everyone’s legal now. 🙂

    Oh and it’s official, no pool this year 🙁
    Got an email this morning stating that it would take too long to get permits, etc. by the end of the summer. Oh well, at least bff lives at another lake community just a few miles up the road. Reading between the lines, it’s probably better not to rush just to get a few weeks in and save the $$. Better to have surplus than raise membership fees.

    Never did get the rain they promised this AM. Now it is hot/muggy – it’s Summer, no complaints…thinking about what
    have around her in Jan/Feb. :/

    Afternoon all! …. its pitch black outside right now, like an eclipse just occurred ….. really it’s the dark storm clouds gathering, I can hear the thunder rumbling out toward the east …. I expect the sky to open up any moment 😕 Joan, I’m gonna have to start counting the fishies, in case any try and ‘make a swim for it’ to the Bayshore …. altho I don’t think gold fishies would do well in salt water!

    ….. yay for your crew getting legal, Mac is official a family member now! …. I may have to disappear soon, if it starts lightning too bad, I need to turn my computer off ….. have a great afternoon everyone!

    OH no Joan,,,now why didn’t they figure all this out about the pool BEFORE the summer? That just sucks monkey toes.
    I’m loving all of these great lasagna recipes, gonna have to save them for later too. I love vege lasagna.

    Unlucky timing, KZ. The pool was painted, filled, filtered and crystal clear in mid June, just before the kids got out of school. All we needed was a heat wave to warm the water. I think it was in full working order for only a few days when the pumphouse floor gave way, sending the pump down to the rocks below and taking the pool water with it. Sad thing is that 20 years ago, all it would have taken is a couple of guys and a weekend to make repairs and get the pump hooked back up. Nowadays there’s all sorts of legal red-tape.

    That sucks Joan – prob forms needed to be filled out in triplicate too, for the various departments involved.
    Although surprisingly fallen tree was removed relatively quickly, guess they had to act fast as was blocking doorway to apt bldg and major safety hazard what with tangled wires from electric lines.
    Hot enough here to fry an egg on sidewalk, although I will not be the one wasting eggs on this project hehehe. Warnings out for older peeps and those who might be compromised by extreme heat. As for moi, well, one min in my A/C and heat/humidity a thing of the past. But even with A/C it was srsly hot in spin class, soaked right through, dehydration alerts, and after-class shower was a joy!
    PG, so your avatar is a jaguar, and here I was mistakenly taking it for leopard – well it does have spots! LOL Your lasagna recipe looks interesting, but too complicated for me. My “Chinese” faux General Tao Chicken came out very well, another one for the recipe folder.
    Now for lunchtime noms as PB/honey/carrot sticks sammie on grainy/cranberry bread, With latte as chaser. And catnap might be in order. L8R.

    OK Joan, my over-heated mind is thinking that dashboard cookies are made in extremely hot weather by baking them on dashboard of one’s vehicle. Am I anywhere near to close ❓ Or are they for real?
