    Biting into a choclate eclair is a sweet, tasty way to start or end your day. Originating in France, eclairs are a light, crisp pastry filled with a pastry cream. More importantly, they feature chocolate!

    There isn’t a good bakery nearby to make Eclairs but when I have one they are sooo light and fluffy. Yum…

    I love the possum sitting in a box of goodies totally stuffed with food and it’s a southern hemisphere possum too PG. You never know where they will turn up.

    MS, tks for identifying the Southern Hem possum – they seem to like desserts too! I just selected him for the pic. They seem to be sleeker than our Northern Hem variety.

    As for that pic just below “Cream Puff” kitty! My mind went on a sortie in “interesting” directions! 😉 Hehehe!

    I love chocolate eclairs too! Well, I am looking forward to the afternoon–am meeting up with my sister and a couple of old friends for wine, snacks and conversation!! Woo hooo!

    Avery is getting her hair cut this afternoon and her momma might take her to the pool for the first time!

    I don’t like sweets, but if they could come up with cheese and onion éclairs, I’d be a happy pussycat. Or smoked salmon ones!

    Those cat éclairs are far too purrty to eat. Especially mammagatta and her gattino!

    Jeankit, what do they use in lieu of the cream or custard? Is it made with tofu or soya cream?

    I just had to google savoury éclairs, and got many hits!

    Great British Bake Off recipe: Mushroom, cheese and bacon eclairs, oh yes!

    I’d pass on the bacon, not only for the benefit of friends who are vegetarian, kosher or halal, but because it is often over the top and dominates other flavours…

    Pastry Cream:
    2/3 cup granulated sugar
    1 tablespoon flour
    3 tablespoons cornstarch
    1/8 to 1/4 cup water
    1 & 1/3 cups soy milk
    2 teaspoons vanilla
    1 teaspoon almond extract

    Or…go to your local vegan bakery…we have a co-op that only sells vegan food/desserts – but special treats are only usually 1 x per week along with daily nomz…will ask next time I’m there!

    Strange weather in n’hood today. On/off looked like it would pour – and me without an umbrella, fortunately it was just a hoax!

    As pick-me-up (not really, deliberated on this a few days back) ordered me a new style of yarn that knits up in wide horizontal stripes. All in one continuous ball so that one does not have to keep changing balls. Going to use it for a sporty sweater in blues, that should work well with my denim skirts.

    And my new CD player has arrived. Neat that I was able to arrange for it to be delivered to local post office. Was considering getting 1-day delivery but changed my mind as I would have been spending $8 more for no purrticular reason. And it took just 2 days anyway! Plan to pick it up tomorrow. I just need it for my 2x/month DIY spin classes, nonetheless I do want it to work.

    Good afternoon all, it;s raining, it’s pouring and HRH is curled up asleep on her new favourite cushion on her new favourite chair. If the forecast thunder storms arrive she may not be on the chair but upstairs under a bed.
    Oh ‘that’ pic KJ. It’s an unbaked eclair. Amazing how something so sluglike can become a delicious treat. Of course your mind went on a sortie in interesting directions and I bet yours wasn’t the only one either. 🙂

    Lagatta, cheese and onion eclairs equivalent would be cream puffs with a cheesy filling. I have made them with choux pastry in the past, more of a profiterole but delicious. OMG all those wonderful looking eclairs in that link.

    Yes, there is truly wonderful baking here, savoury and sweet. And not only French: there is wonderful Ashkenazi Jewish baking, and baking from the Arab world (including Muslim, eastern Orthodox Christian and Sephardi Jewish immigrants from the Levant and North Africa), Italian, Portuguese, Greek and many other origins. Also Eastern European other than Ashkenazi…

    And many more origins.

    And there are some very good places where the gluten intolerant and people with other allergies can find top-flight baked goods. This is one near me; the baker’s wife is coeliac; he is Tunisian and trained in classical French pâtisserie and boulangerie.
