I’ve never heard of sunacat either but I would use Splenda anyway.

MMmmmm. I love carrot cakes and breads. I am going to try this with golden raisins, I like how they taste with carrots. I might also substitute unsweetened applesauce for Sucanat. It sounds delicious.
