    Spanish Rice

    1/2 cup thinly sliced onion

    1/3 cup diced green pepper

    2 cups Minute rice

    1/4 cup butter or bacon drippings

    2 cups hot water

    2 cans (8 oz. each) tomato sauce* (see below)

    1 teaspoon salt

    Dash of pepper

    Saute onion, green pepper and minute rice (right from the box) in the butter.

    Add remaining ingredients; mix well. Bring to a boil. Then reduce heat and simmer, uncovered, 5 minutes. Makes 6 servings.

    * Or use 4 cups (2 cans, 1 lb. each) tomatoes and omit the water.

    Variations:

    Beef Spanish Rice- prepare as above, sauteing 1/2 to 1 lb. beef with the rice.

    Franks and Rice- prepare as above, sauteing 6 franks, cut in 1-inch pieces, with the rice.

    It really should be called South American Rice… 😉 (Spaniards don’t cook with butter)

    Hi Pipa’s mum,

    This recipe is so old, it uses bacon drippings! This recipe was before microwaves were popular. I’ve had it for over 25 years.

    Pipa, my mom had this recipe and I copied it down years ago when I started collecting recipes before I got married. My mom used to fix it, I haven’t had any in years but I thought about trying the beef variety. Do you have Minute Rice over there? It is a quick cooking rice, you end up with no hard pieces, like when you cook with regular rice.

    Hi Renee… so sorry I missed you for a while! I’d been off to lunch.

    We have minute rice, long rice, etc… but we use the short grain that takes longer but is tastier…

    If you added seafood, sausage, chicken, etc and a little saffron or tumeric it is like a cheat for paella
