    I am not a vegetarian but I get tired of eating meat and sometimes want to have a dinner without any. Tonight was one of those nights and I came up with a recipe which was easy, very inexpensive and tasty. I thought maybe you would be interested if you have a day when you don’t know what to cook and think “Why not?”

    1/2 lb fresh button mushrooms

    3 green onions

    4 strips of bacon

    1 big potato

    I cut up the bacon into pieces about 1/2 wide and fried them in a little butter.

    Before the bacon got crisp I threw in the chopped onions greens and white part

    I cut the mushrooms in half, some of the large ones into 3 and threw them in the frying pan last. Stirred everything and then covered them after adding about a tablespoon of water. The water kind of steams the mushrooms.

    In the meantime I peeled, cooked and mashed one huge potato. When everything was done I tossed the ingredients (including the bacon fat which wasn’t much but tasty) into the mashed potato and mixed them together.

    It was delicious. It was quite filling on its own but I could see this being used with steak or another meat like liver as a side dish. The only thing I would change next time is to put the onions and mushrooms in at the same time as the onions cooked quite quickly and kind of disappeared on me although the flavor was still in the mix.

    Sounds yummy, but I’m a little perplexed…bacon is meat. I am a vegetarian …but there is pretty good veggie bacon that could be used!

    TL I didn’t know there was such a thing as veggie bacon. I’ll have to look for it. You are right about bacon being meat. I guess I am contradicting myself but when I think of meat for dinner what I was referring to is beef, pork, chicken. Something that inevitably leaves me feeling heavy, bloated and lazy. Bacon bits doesn’t come under that category for me although of course it isn’t vegetarian. I bet the recipe would be good even without the bacon though or maybe use the veggie bacon.

    Hi petpntr, I know what you mean. Yes, there are different kinds of veggie-bacon, some better than others. The best one is from the Loma Linda products, honestly , it really is pretty close to the real thing.

    I’m doing fine tonight, had a wonderful dinner with most of the ingredients coming from our garden, even the freshly dug potatoes, which we had with fresh chopped mint. Mr MS is back off to work in the morning after a week off for bereavement leave and the flu so I thought I had better feed him up as he does his own meals during the week(with a can opener). How’s work this evening?
