    You guys should know by now that I’m always sharing receipies, here’s one I made last night, it’s one of my family’s absolute favs, and it’s one of those “you can’t screw this up” type of receipe!! Kids love this!

    Perfect Baked Chicken & Rice

    8-10 pieces chicken thighs & legs

    4 ½ cups chicken stock bring to a boil

    2 cups regular white rice

    Thyme 1 tsp. finely chopped

    2-3 cloves garlic finely chopped

    1 large onion rough chopped

    1 lb. sliced fresh mushrooms

    Salt, pepper & brown chicken on both sides; set aside. Saute onions, garlic & mushrooms. In a greased casserole dish pour 2 cups rice then add the onion/mushroom/garlic mixture and the fresh thyme leaves. Once stock comes to a boil, pour over rice and stir. Add in chicken and cover tightly with foil. Bake at 375 for 30 minutes. Turn temp down to 350 and bake for 45 more minutes. Comes out perfect every time!!

    As a footnote – you could use pieces of turkey if you like, for someone who wants a simple Thanksgiving – this could be your one pot wonder! Add a salad and you’ve got dinner!~

    Hi everyone! Pika, not been to Scotland yet?! You must come up at some point! I’m in Dundee, if you ever find yourself up north :). AV – my man and I’s most recent holiday was Lindisfarne – Lincoln – Bath (and Stonehenge, and all the attractions round there. And Longleat!!!) – Chester (amazing zoo, much better then longleat) – Hadrians wall – home, driving holiday but had a bit of time at Bath. It was great, so often when you live somewhere you don’t bother to see its attractions.

    Can I have a hot chocolate, and a dunces cap please? Just did somehting really stupid because I was in a hurry. Any tortoishell kitties around too?

    AV, that recipe sounds yummy and easy. I like those!!

    Kykat…oh god, I hope Abigail is still more than 2 weeks away from coming 🙂 I just have to hold her in there for 2 more weeks so there is no problems. Due date still is January 17th, unless she decides different. Actually she is coming at least a week before her due date since I am having the c-section.

    Hello again!!!!

    I met a friend for coffee and she told me to go take a nap. I went home to nap a bit, but my phone wouldn’t sttop ringing, so I gave up and went back to the puppies’ house since my internet is down for the second day at home. I called Comcast who told me there’s a problem in my area – at least I have a computer at work and at the doggies’.

    They called to remind me from the gym that I’m now working 4-9. I called them back and told them they’d said 5-9 and they said that was fine. They sounded like they couldn’t care less, so I know I’m out of there soon. Today is my payday, so we’ll see what happens.

    A friend of mine just booked me to watch her dog in April and told me she’d ven my number to a friend who needs someone to watch her two dogs at Christmas. I already have one dog booked for sure that week and almost certainly another (new) dog and a friend’s two cats. I have a friend I’ve sat for for about 6-7 years who always goes away for Christmas and has me watch her dog, so I’m half counting her in, too. I hate to tell a new person “no”, but I just don’t see how I can swing it, even if I’m done at the gym by then. I’ll have to think about it – I have to have time for my own boys, too!

    Good for your friend to tell you to take a nap! Sorry you couldn’t GD. The sooner you are away from the gym the better. Hopefully you can do your dog/cat sitting and make what you need from it. It seems like business is picking up!

    I always does at this time of the year, CM. I need to make sure I’ll have money coming in throughout the year, though.

    I’m still feeling snotty today and my cheekbones are hurting with the sinus pressure. At least I’m not dizzy today and less wobbly feeling and if I have a fever, it’s a low one.

    I’m thinking of heating up the left-over spaghetti from last night since I haven’t eaten today and need something before I go to work.

    Good morning, afternoon or evening (whereever you are in the world). I have been busy with a few things this morning. It has been a bit confusing here at work what first being given some responsibilities and then told they are not mine yet. I am a little frustrated but will keep it to myself for now till they figure things out.

    Had a nice family get together at my parent’s house last night. My uncle and cousin are in town for the week of Thanksgiving. We celebrated my Step-Grandmother’s 88th birthday. She is on oxygen and also has a pacemaker. When I saw her last night, she looked really pale and exhausted. I am concerned that her health is not good but at least her she was in good spirits giving everyone kisses and hugs while sitting in her wheelchair. I will see her on Thanksgiving with the rest of my family except my sister and her new husband as they will be visiting at her husband’s family for Thanksgiving.

    GD, please take care of yourself. You sound like you have a nasty cold and we don’t want that to get worse.

    Kilroy, I am glad you had a good weekend with George. Nice to be woken up to a purring cat. Sylvester and I had our morning loving. When I went to say good-bye he started purring again. It was almost like he was saying don’t go, we aren’t finished here with our morning fun.

    Kilroy, I’m so glad Georgie is being so good these days. You deserve a loving kitty!

    Karin, I’m going to try to take better care of myself. I’m going to get some multivitamins and some vitamin C and maybe even work on learning to tell people “no”!

    I have a special tennis event tomorrow that I’m signed up for with my doubles partner. I can’t not go – both because she needs me there and because I’ll screw everything up for everybody if I don’t go. Two of my friends are the organizers of the event and I want it to go well for them.

    Hello again! sorry, didn’t mean to leave you wondering, I left work just after I posted :). I needed to pour some liquid and I needed it no more than 60 degrees C, but it had just boiled and was at about 90. So I ran a glass bottle full of extremely hot liquid under the cold tap…. At least it made a lovely cracking noise! lol!

    I’m here! Not much going on at the gym. DQ, who seems fed up and ready to quit again, told me they are thinking of leaving the front desk unmanned for the first 4 hours of the day (6-10) – they must be either out of their minds or out of money!

    Speaking of money, I didn’t get paid today, because EBL was gone for the day when I got here. She’d better leave me a check tomorrow!

    Oh no GD, that is so wrong that they didn’t have your paycheck for you when you got there. I would suggest calling EBL and leaving her voice message reminding her that you depend on your paycheck and to make sure she leaves it for you tomorrow in a secure place.

    I think Emma needs to don her ninja warrior and bring the wack bonk sticks to your work tomorrow to make sure you get paid. Sheesh! The nerve of the EBL.

    I usually give EBL an invoice every 2 weeks with my numner of hours and a total for her to pay me. She’s only not paid me on the day I gave her the invoice once. I gave DQ my invoice to give to EBL tomorrow, so hopefully she’ll leave a check for me tomorrow. If not I WILL send for Emma!

    Hi again, everybody! Now I’m at the library checking email, etc., so I’m just checking in to see how everyone is!

    So far we are having a nice visit with my mom in San Diego. However, I’m wondering where all the warm weather and sunshine is! It is cloudy and cool today, and there is supposed to be RAIN tomorrow and Wed. 🙁 Poor Mr Rubia – he is supposed to be playing golf both those days. Who would have thought he’d need to bring his waterproofs to San Diego?

    Well – gotta go! Time is running out on the computer! I will try and check in again later in the week!
