    Of course, cheese is for breakfast!

    Breakfast Enchiladas

    INGREDIENTS

    * 1 (16 ounce) package frozen hash brown potatoes

    * 1 cup diced cooked ham

    * 1 tablespoon vegetable oil

    * 1 (4.5 ounce) can diced green chile peppers

    * 1 1/2 cups shredded Cheddar cheese, divided

    * 1 (28 ounce) can green chile enchilada sauce

    * 8 (10 inch) flour tortillas

    DIRECTIONS

    1. Preheat oven to 375 degrees F (190 degrees C).

    2. Brown hash browns and ham in 1 tablespoon of oil in a medium skillet over medium high heat. Stir in diced green chilies and 1/2 cup of Cheddar cheese. Cook until cheese has melted.

    3. Coat the bottom of a 9×13 inch baking dish with a small amount of enchilada sauce. Dip each tortilla in remaining sauce, and fill with potato-ham mixture. Roll each as tightly as possible and place in the baking dish, seam side down. Top with remaining sauce and cheese, and cover with tin foil.

    4. Bake, covered, in the preheated oven for approximately 20 minutes. Remove foil and bake for another 10 minutes, or until lightly browned on top. Serve immediately.

    You can substitute sausage for the ham. And it’s good to add some nice, fluffy scrambled eggs, too!

    Easy Bake Cheese and Pesto

    Recipe Provided By: Kraftfoods.com

    1. Ingredients

    1. 1 (4 ounce) can refrigerated crescent dinner rolls

    2. 1 (8 ounce) package PHILADELPHIA Cream Cheese

    3. 2 tablespoons DI GIORNO Basil Pesto Sauce

    4. 2 tablespoons chopped roasted red peppers

    5. 1 egg, beaten

    2. Cooking Directions

    1. Preheat oven to 350 degrees F. Unroll dough on lightly greased baking sheet; press seams together to form 12×4-inch rectangle.

    2. Using sharp knife, cut brick of cream cheese in half horizontally; place one half on top of one half of the dough. Top with 1 Tbsp. pesto and red peppers. Place other half of cream cheese brick on top. Top with remaining pesto. Brush edges with egg. Bring dough over cream cheese to completely enclose cream cheese; press edges together to seal. Brush with egg.

    3. Bake 15 to 18 min. or until lightly browned. Cool 10 min. Serve with RITZ Crackers and fresh vegetables.

    Yield: 12 servings

    Breakfast Fruit and Cream Cheese Sandwich

    Ingredients

    2 slices cinnamon raisin or plain cinnamon bread

    2 tablespoons pineapple cream cheese*

    3 medium strawberries or 1/2 of a medium banana*, sliced

    Directions

    Toast cinnamon bread. Spread 1 slice of toast with cream cheese. Top with strawberries and remaining slice of toast.

    * Note: Other flavored cream cheese and fruit can be substituted for individual preferences.

    Blue Cheese Stuffed Dates

    Ingredients

    2 ounces Blue cheese

    12 dried dates, pitted and cut into half lengthwise

    24 blanched almonds, toasted cayenne pepper

    Directions

    In a small bowl, mix the cheese until creamy with a hand mixer. You may need to add a few drops of milk if the cheese is crumbly. Set aside. Place the dates on a serving platter. Using a knife, spread about 1 teaspoon of cheese on the cut side of each date. Top with 1 almond. Sprinkle the stuffed dates with a dash of cayenne pepper and serve. Tips: For a variation, use pitted dried plums (prunes) or dried figs.

    WWM…I make these often…they are stinkin’ great! Sweet and salty combined…fantastic. I have not tried the cayenne pepper…good addition!

    The wheels of Presidental Brie were on sale at my local grocery store…buy one get one free…and I am embarassed to admit that I ate an entire wheel in two days. And it was only considered two days on a technicality…I ate half last night and half this morning…stop judging me…haha!

    I just had a Tomato Mozzarella Salad tonite from Panera. You know its bad when you walk in the door and they don’t even have to ask your order they already have it punched into the computer with a total! Wonder what they would do if I changed my order?! Well I have, their Tomato Mozzarella SANDWICH! Everything is better with cheese!
