    Oh, my – martinis AND cheese??? Now that’s what I’m talking about!

    SMOKY CHEESE SPREAD

    INGREDIENTS

    * 2 (8 ounce) packages cream cheese, softened

    * 2 cups shredded Cheddar cheese

    * 1 dash liquid smoke flavoring

    DIRECTIONS

    1. Blend cream cheese, Cheddar cheese and liquid smoke in a small mixing bowl, cover and refrigerate for at least 1 hour. Serve at room temperature.

    In honor of Mother’s Day we should celebrate by eating…what else….cheese!

    Black Olive and Goat Cheese Sandwiches

    Ingredients

    Goat cheese:

    * 1 pound fresh goat cheese

    * 1/4 cup cream

    * 2 tablespoons chopped thyme leaves

    * Place all the ingredients in a bowl and stir to combine. Set aside.

    Tapenade:

    * 1 cup pitted Kalamata olives

    * 2 anchovy fillets

    * 2 teaspoons capers packed in brine, rinsed and drained

    * 1/2 teaspoon smashed garlic (use the edge of a large, wide-bladed knife)

    * Place all of the ingredients in a food processor fitted with the metal blade and process until finely chopped. Transfer to a bowl and set aside.

    Assembly:

    * 8 flour tortillas, 10 inches in diameter

    * 2 roasted red bell peppers

    * 2 cups frisée, coarse ends trimmed, curly tips torn into pieces

    Preparation

    1. Lay the tortillas in front of you. Spread 1/4 cup of the goat cheese over the center portion of each tortilla. Spread 1 generous tablespoon of the tapenade over the goat cheese.

    2. Cut each pepper half into 6 strips and lay 3 strips along the center of each tortilla. Top the pepper with some frisée.

    3. Fold two sides of the tortilla over the frisée, then roll up the tortilla. Cut each wrap crosswise into 4 pieces and serve from a platter.

    The article in Gourmet said that these were perfect to take to the beach or to the pool. I wish we were at the beach drinking Mai Tai’s, don’t you, MC?

    At one of our local eateries they have a special melt.

    hamburger patty

    slice of american cheese

    2 strips bacon

    grilled on sourdough bread, crusted in parmesean cheese.

    Their french fries and onion rings are dee-lish too!!

    Twice Baked Potatoes with Two Cheeses

    Ingredients

    * 6 11- to 12-ounce russet potatoes

    * 1/2 cup whole milk

    * 2 teaspoons minced fresh rosemary

    * 6 tablespoons (3/4 stick) butter, room temperature, divided

    * 8 ounces Roquefort cheese, crumbled

    * Coarse kosher salt

    * 4 ounces Gruyère cheese, grated

    Preparation

    Preheat oven to 350°F. Bake potatoes 30 minutes. Using fork, pierce potatoes in several places. Bake until tender, about 1 hour longer. Maintain oven temperature.

    Meanwhile, microwave milk and rosemary in microwave-safe cup on high heat 45 seconds; let steep 30 minutes.

    Slicing lengthwise, cut top quarter off each potato. Scoop potato into large bowl, leaving about 1/4 inch of potato in skin. Scrape potato out of tops; discard tops. Coarsely mash potato. Add 4 tablespoons butter; mash. Mash in milk mixture, then Roquefort cheese (mixture will be slightly stiff). Season with coarse salt and pepper.

    Divide mashed potatoes among potato skins; transfer to rimmed baking sheet. Sprinkle Gruyère cheese over potatoes, pressing slightly to adhere. Dot with butter. DO AHEAD: Can be made 4 hours ahead. Let stand at room temperature.

    Bake potatoes until hot and tops begin to brown, about 30 minutes.

    OMG! I am getting hungry for anything with cheese! Not sure if my sister, Joan, ever told any one….but years ago when she and her husband came out to see me, she of course had her cheese slices on board the plane. When they were served sandwiches, she pulls out her cheese for her and her husband to add to their sandwiches and everyone was wishing they had cheese too!
