    Now I’m hungry! My niece sent me this article yesterday because as handy as I am in the kitchen, I cannot seem to make a decent burger.

    Me too. I’ve tried something I will again. Don’t know where the idea came from, some gourmet chef no doubt. But I wrapped the meat around a pat of cold butter. Not only did I like the flavor, but the hamburger didn’t bulge up in the middle as it cooked. I also salt the meat before I form the patties. Oops! broke one of the rules!

    Huh. It’s amazing that I’ve ever successfully grilled a burger at all, considering that I didn’t know half of these tricks. Things to consider…

    I can grill a burger, but not make one in the cast iron skillet like my mom used to. Those were the BEST!!

    HM, I really think it’s the kind of hamburger these days. Maybe the guy in the article is right, you have to choose the cuts of meat and grind it yourself! My memory of the cast iron days when my mom would make the best burgers (I’ve never been able to duplicate either) is also that there was a high fat content, and that helped make them so nice (kinda crunchy) on the outside and so yummy on the inside.

    Oh, paulajeanne I believe you are correct! Those are the burgers I remember, as well.

    Who started taking all the fat out of the meat anyway???? It adds juiciness AND flavor! *shakes fist*

    I can’t see myself grinding my own hamburger though.

    The last time I browned ground beef, it looked like mouse pellets because of the stringy way they’re now grinding it. Anyone else notice that?

    One time, for no particular reason, I used chili meat (coarser grind) to make burgers. They turned out GREAT! I just haven’t done it since ’cause I have to work for a living and come home too tired to cook.

    I firmly believe that the natural oils in our hands impart some kind of flavor to homemade burgers. Even home-cooked burgers made of pre-formed patties don’t taste the same as one that a real, live, person patted out with by-God real hands (no “practice arms” allowed)! (sorry, a little “Night Shift” humor)
