    This recipe is from my American mother-in-law Dot and is very simple and yummy.

    1/2 cucumber – peeled, seeded and diced

    1/2 red onion (Spanish onion) – chopped finely

    1 avocado – chopped

    1/2 tsp oregano

    3 T olive oil

    2 T red wine vinegar

    1 litre (4 cups)tomato juice

    2 limes – squeezed

    ice cubes

    Mix all together and serve with ice cubes and lime juice or slices of lime.

    I add about 1/2 a teaspoon of smoked paprika to this recipe to give it an mmmmmmmmmmmmmm taste.

    Ehmmm…. I hope you know that this doesn’t even look like the Spanish gazpacho… 😉

    Pipa, give us a look atyour favorite gazpacho recipe. I have been tempted to try and make a version that doesn’t include the onion since I am allergic.

    Hero you go!

    Ingredients

    10 oz of bread

    21 oz. of tomato

    1 clove of garlic

    1 onion

    1 red pepper

    1 green pepper

    1 cucumber (small)

    7 tablespoons of raw olive oil

    2 tablespoons of vinegar

    2 tablespoons of cold water (to soak bread)

    Preparation

    In a big mortar mash the garlic and the bread soaked in water, in a bowl mix the chopped onion, the chopped tomato, the cucumber, the peppers, the oil, the vinegar, the salt and the contents of the mortar, mash it with the mixer and add very cold water until it is smooth. Add salt and strain it. Keep it in the fridge until served.

    pperason dear, you can have it without onion but don’t forget the garlic!

    I always though gazpacho had clams or something in it. I must be thinking of something else.

    No HM, it is just cold soup. Very tasty and full to the brim with vitamins because everything is raw.

    Can’t think of anything made with clams…

    Would make spaguetti carbonara for you heavy on the bacon 😉

    FH, I’m going to make your cornbread when my dad get home from the hospital. He’s a meat and potato kind of guy and he will LOVE the stuffing with Jimmy Dean in it! Sounds wonderful.

    Pipa’s Mum – You’re not going to invoke EU regulations and stop me calling mine gazpacho are you? Must make your recipe with the bread – it is easier than a lot I’ve seen.

    Pipa’s Mum, I have always thought of gazpacho as more of a liquid salad than a cold soup, but maybe that’s just me… My recipe is pretty close to yours, but I usually don’t use a mortar. Usually, I’ll remove my hand and use my blade attachment…

    Well KapitiKats I’ve left the choice to sue or not in our Kings hands… putting avocado in the gazpacho is pretty serious business, not to mention lime and oregano!!! Do it again at your own risk!!!!

    Pipa’s Mum, try KK’s recipe but don’t call it Gazpacho. It too is full of vitamins and everything is raw. Let us know what you think of it.
