Steamed asparagus with Hollandaise Sauce is a favorite of mine. The Asparagus Golabki sounds delicious.

What great recipes. Here is my favourite for a cool Autumn/Fall evening, in fact it is dinner this evening.

Tonight I have added red and green capsicums for extra colour and we’re having fresh string beans straight from the garden.

….. yummmmmm, that sounds great!……….. I love smoked paprika! those flavors are not something I’d typically put together, but I can see how they would compliment each other……….. I may try that out this weekend!.

I would never have thought of putting those spices together either but they work beautifully.

You know what! This could totally be a great thread! We could all share recipes and maybe there could be a second edition of the TDK cookbook! I love some of the dishes you guys make and if you would be willing to share the recipes, that would be amazing! I have to say we a few really talented folks here that I drool over their meals. Thanks for starting this, I am excited about it. I know my mom has some old Greek/Macedonian recipes from her parents and I hope to get them one day. Hopefully I will get them before she gets too old to remember them!

A great way to prepare chicken fillets:

Preheat the oven to 275 C (527 fahrenheit), with just the top heaters on. Mix 1/2 a tablespoon of melted butter, some salt, pepper (+ spices to taste) and rub into both sides of the sliced chicken fillets. Place them on some foil (so the buttery mix won’t go all over the place) and stick em’ in the oven about 10cm (4 inches) away from the top heaters. Cook for 10 minutes, flip the fillets over, cook for another 10 minutes. So tender and yum!

Oh my gosh, a fooood section!! Here is an eggplant recipe for ya. 🙂

    1-2 eggplants

Tomato sauce (about 3-4 cups worth)

    Small container Ricotta cheese

    16oz Mozzarella cheese, sliced thin

Peel the eggplant (or don’t peel..your choice), and slice long-ways about 1/2 inch thick. Salt the slices, and let them sit in a colander over a bowl. Let them “sweat” for 30-60 minutes. Rinse in cold water and pat dry. Fry them (no breading) in a little olive oil until soft.

Add some sauce to the bottom of a baking pan. Next, place a layer of eggplant. Top with ricotta, then slices of mozzarella, and then a little sauce. Repeat, ending with sauce topped with mozzarella. Cover loosely with foil and bake at about 375 degrees F for maybe an hour (until the sauce thickens up so it’s not soupy).

It’s lasagna without the pasta, and very tasty. 🙂
