    Egg Custard

    4 eggs, beaten

    1/3 cup sugar

    1 teaspoon vanilla

    1/4 teaspoon salt

    3 cups milk

    1 teaspoon cinnamon

    dash of cinnamon on top*

    Beat eggs, sugar, and salt till fluffy. Add milk, vanilla and cinnamon. Pour into a buttered 8″x8″ or rectangle glass baking dish. Sprinkle some cinnamon on top before baking. Set in a pan of water and bake at 350F degrees for 1 hour or until knife inserted in center comes out clean. *Put enough cinnamon on top to cover the surface. You can adjust the amount to your taste.

    This is a really old recipe and it didn’t have much in the way of instructions, so I did the best I could from memory. It is one of those recipes that was passed to my mom then to me without much written down. Hope you enjoy it.

    Sounds yummy. Baked custard, huh? My grandmother (who, if she were still alive, would have turned 101 last week) made a boiled custard that was heaven on earth. She always stored it in a Miracle Whip jar on the top shelf of her ‘fridge (yes, she washed the jar first!). The thing that seemed to make it the most delicious was the way she built anticipation for that bowl of nirvana by the litany of apologies she dished out as she spooned the custard: “I’m ashamed to serve it to you…it turned out so runny…I think this is probably the worst batch of custard I’ve ever made…I probably should have thrown the whole batch out…” We all knew that the more she apologized, the better it was!

    Man, I miss my grandma! It’s been almost 13 years now since she passed, and my eyes are tearing up now as I think about how much I loved being with her.

    You are welcome Paulajeanne. We love egg custard. My mom could never make enough of it for us or my grandpa, he would eat the whole thing! It tastes good hot or cold but I prefer it cold.
