    When I first started using my crock pot, I ran into a lot of different chicken recipes, but only one recipe for cooking a whole chicken.

    After getting used to cooking with the crock pot, I came up with my own recipe for crock pot Chicken. Tonight was the first time I tried it out and it came out perfect, so I decided to share it with all of you. I made Stove Top stuffing with the chicken tonight, and it went perfectly with the chicken.

    Anyway, here it is:

    Crock Pot Chicken

    1 whole chicken (make sure you get one that is small enough to fit in the crock pot along with all the vegetables)

    1 26oz. can Cream of Mushroom soup

    2 or 3 large potatoes peeled and cut into large pieces

    2 carrots – sliced

    1 onion chopped

    4 tsp. minced garlic

    Salt and Pepper to taste

    Place the potatoes, carrots, 1/2 of the onion, and half of the garlic into the crock pot. Add the Cream of Mushroom soup (leaving about 1Tbsp in the can) along with salt and pepper to taste. Stir until everything mixed together.

    Stuff the chicken with the remaining onion and garlic. Rub the chicken down with the Cream of Mushroom soup that was left in the can along with salt and pepper to taste and place the chicken into the crock pot.

    Cook on high for about 2 hours then turn down to low for 3 – 4 hours or until the chicken is thoroughly cooked. Watch the crock pot closely and remove broth from the crock pot as necessary. If you are making Stove Top stuffing, I suggest using the broth, instead of water, to cook the stuffing.

    Note: I used a 4qt. crock pot to make this recipe. Cooking time may need to be adjusted depending upon the size and type of crock pot you are using.

    Sounds good. I have a recipe for some quick and easy chicken rice that would go good with chicken and it doesn’t involve heating up the kitchen! It is prepared in the microwave. It takes about 15 minutes to fix (that includes 5 minutes to set). I can post it later if anyone is interested.

    AZDEB, good morning! have you ever fixed a ham in a slow cooker? I like those small boneless hams. I put them in the slow cooker and cook them for several hours. It doesn’t heat up the kitchen and it gives you a little more time to do other things. I fix a ham like that and use it for sandwiches and quick meals. You can fix chili, pot roast and soup in the crock pot too. I used to fix spaghetti but it got to where a 6qt. slow cooker wasn’t big enough, so I got a 16 qt. stockpot! lol we love spaghetti!

    Renee, g’morning 🙂 Haven’t tried making a ham or spaghetti yet, pot roast and pork roast are so nice when cooked in the crock pots. Soups are good too, I am going to try those bag inserts too, if they work then it would be even less clean up afterwards.

    Wow! Crock pot! I have never been a cp cooker. This has given me some good ideas, I especially like the ham and pot roast ideas. I have a recipe for tomato soup, onion soup, and chuck roast. That should be wonderful!!! *drool* ..

    HM, I was never a CP cooker either and now, I love it. I make roasts, pulled pork, lasagna..its so easy and I don’t have to think about it. 🙂

    Yum, that chicken recipe does sound good–with the exception of the garlic in my case (I’m not a real fan of garlic-comes back on me).

    Cricketsmama–I’d love to have your recipe for the pulled pork!! I do like pork and it would be easier to make in the crock pot, I’m sure.!

    MMM, I just buy a pork roast and put it in the pot. Then I use a packet of McCormick Slow Cooker seasoning for pulled pork. You mix that with the recipe on the back(ketchup, brown sugar and cider vinegar) pour it over the pork and turn on the pot. About an hour before it’s done, I shred it and put it back in the pot so the juice gets all over. Super easy.

    Thanks CM–I would think I’d buy a boneless pork roast? I knew there was something about putting vinegar in the cooking process, but I’ve only used the brown sugar/water/cider vinegar concoction on ribs before. Now I’m very hungry for this–must..go..to..the…store………
