    Just give me chocolate. I am so tired.

    Today is All Souls and we are singing the liturgical version of the Fauré Requiem at church tonight, so I can’t eat properly until afterwards. If I eat too much I’ll sing flat. Thank goodness for cyber food!

    Good morning, all. I’d like to add a quiche that Paula Deen made yesterday on her show. It was a ham/cheese/onion quiche with a hash brown potato crust!

    If no one minds, I will have breakfast for lunch today. A piece of quiche, some fruit compote and coffee with Baileys will do nicely.

    Here is a pitcher of fresh squeezed oj from the Sunshine State and French Champagne for those who would like a mimosa!

    Actually, I went to the store yesterday after I watched Paula and bought all the ingredients. Think I’ll make it (for real) this weekend.

    Here’s the quiche recipe for anyone who would like to try it:

    Hash Brown Quiche Recipes courtesy Paula Deen, 2007

    3 cups, shredded frozen hash browns, thawed and drained

    4 tablespoons (1/2 stick) butter, melted

    3 large eggs, beaten

    1 cup half-and-half

    3/4 cup diced cooked ham

    1/2 cup diced green onions

    1 cup shredded Cheddar

    Salt and freshly ground black pepper

    Preheat oven to 450 degrees F.

    Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.

    Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.

    Lower the oven temperature to 350 degrees F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.

    I copied that recipe! BTW, I often eat “breakfast” food for supper. I just can’t eat a big meal early in the morning, and omelet suppers are a great way to clear out the leftovers in the fridge.

    N&N’s Mom-many an evening when I really don’t feel like fixing supper, I resort to some kind of eggs, bacon or sausage, and maybe even a couple of pancakes. I don’t like to eat a heavy meal late. And it’s an easy meal to fix for just one person, too.

    I have something simple that I fix with a meal or as a side dish to a sandwich but my hubby says, he could eat it as a meal by itself. I call it Chicken Rice, it takes a total of 20 minutes to fix, 5 minutes to mix it together, 10 minutes to cook in the microwave and 5 minutes to let it set. I guess it could be like eating a thick soup. If you are interested, I can post it here or send it to you, Max and Molly’s mom, unless someone else is interested in the recipe. It probably makes about 6 servings and can be re-heated. If you don’t like it, the cats will! lol

    Renee in Arkansas….sounds intriguing (spelling?)Rice recipes are hot in our house…we buy it by the 25 lb. sack. I’ve recently taken to grating anything and everything into the rice water at onset of cooking…or halfway through and it’s wonderful. carrots, zucchini, bacon bits and cheeses.

    Here is my recipe for you Catwoman and Karenopa.

    Chicken Rice

    2 cups minute rice

    1 cup water

    1 cup milk

    1 can ( 10 3/4oz.) condensed Campbell’s Cream of Chicken soup

    You need a 2 quart covered microwavable bowl. Pour Minute rice into bowl; add milk and water. Stir in Cream of Chicken soup. Cover and microwave on HIGH for 10 minutes. Remove from microwave and stir thoroughly to finish mixing in the soup; Cover and let set for 5 minutes, so rice will finish absorbing the liquid. Serve. Makes about 6 to 8 servings.

    I have never tried making this with regular rice, it called for Minute Rice. It cooks quicker in this recipe. I’ve probably had this recipe for about 15 years and I haven’t seen it since. It even had a recipe for cheese rice or spaghetti rice. The Cheese rice recipe, I used Cheddar cheese soup instead of the Cream of Chicken and it was good. The spaghetti rice was fixed a little differently. If you would like that recipe too, I will look it up for you.

    Hi Max and Molly’s mom, here is my recipe for you and anybody else that would like it. I have made this dish so often, I think I can do it in my sleep! lol

    I thought about trying the Spaghetti rice, sometime. It sounded interesting. You know how you get sometimes, you just want to try something different for supper.

    Hi Max and Molly’s mom, again!

    Have you seen the recipe for Cheesy Chicken and Rice Bake on the back of the Cream of Chicken can? It is for a small meal. I think it only takes like 4 chicken breasts and some rice and other ingredients. You could always just use two chicken breasts, if the other makes too much for you. It only makes 4 servings. It looks yummy. I love baked chicken and rice but the recipe I used to use for that , took a whole chicken. I always ran out of rice, so I started fixing this recipe to go with it.

    Thanks Renee. Something else you could do is add leftover chicken to that recipe. I like to get cooked chickens from Meijer’s (a big grocery/dept. store in Michigan) or Kroger’s, and always have so much. I have dinner a couple of nights, then chicken breast sandwiches or make chicken salad, but still have more left. Sometimes I just throw the carcass into chicken stock and make soup, too. Thanks again, will give it a try soon.
