    I don’t know if this is too late or not. I’m sorry, I meant to post earlier but forgot. I have a great recipe for a cheese dish which is really good if you are having company or going to a party and need to take something. It is made with cheese, pimentos and Bisquick. Actually I love to have it in the morning with coffee after all the partying is over. It will keep in the fridge for a few days.

    If anyone thinks they may get some use out of it I will be pleased to post the recipe.

    Cheese Bake

    This is excellent immediately after baking but it is also delicious cold. If there is anything left over I love eating this on Christmas morning with coffee.

    1 pound sharp chedder cheese

    8 oz of pimentos

    I get the sweet red peppers in a jar in the Italian food section. If you get them with the skins still on, remove skins to use in recipe.

    1 1/2 Cup Bisquick

    3 Eggs well beaten

    pinch of salt(?)

    In an oblong or square baking pan, grate the cheese and spread on bottom of pan.

    Cut up the peppers in thin slices(strips) and place an even layer entirely covering the cheese

    Mix milk, bisquick and eggs and pour on top

    Cover with foil

    Bake in 350 degree oven for 20 minutes and remove tin foil

    Bake for another 15 – 20 minutes until browned on top

    Remove from oven and allow to cool before slicing up into bite size squares.

    Delicious.

    This sounds wonderful, Petpntr! Although, technically it should be on the “I like cheese” thread. 🙂 Mr. WWM doesn’t like pimentos or peppers too much. But I don’t see any reason why you couldn’t substitute green chili strips.

    Green chili strips would work WWM. Actually even tho the Mr doesn’t like pimentos, when they are baked with the cheese you don’t really taste them. They just blend nicely because the cheese is strong. When I worked in an office 100 years ago someone brought this in for a get together and every one at the place insisted on getting the recipe. It really is delicious and I guarantee if you have it once you will want it again. I make it every Christmas and sometimes at Easter too. Let me know how it works out for you. Maybe you could do half green chili peppers and half sweet red peppers. Boy that would really look like Christmas wouldn’t it?

    Yum! I’m thinking you could also use jalapenos and then have toppings like salsa, sour cream and fresh avacado mash! Ole! I will definitely try this too!
