    Beet Pickles by Craig

    basic brine ratio: 1 cup of sugar to 1 cup of vinegar {apple cider} and bring brine to boil

    – wash and trim beets

    – boil until tender (about 15 min), put in cold water. to slip skins, should slip off quite easily (would wear gloves) and do any necessary further trimming

    – chunk or slice up and add to jars (have lids and rings ready)

    – fill jars with brine and cover

    – hot water boil/bath, pints 30 minutes, quarts 35 min

    Note: 10 pounds of beets with 6 cups of sugar and 6 cups of vinegar makes about 14 pints

    Thank you so much for this PJ, I was checking out my beetroot earlier and there are some lovely big one. Should be ready for this recipe very soon. The recipe is similar to one Mum uses with the exception of the vinegar. We tend to use malt vinegar for preserves in NZ but I think I’ll try the apple cider vinegar on my beets.

    I like the fruitiness of the apple cider, In fact I think my mom used it in all of her pickling recipes, even if the recipe called for white vinegar. Let me know how it works, anxious to know how you like them!

    So many pickled beet recipes have so many different spices, herbs, onions, etc, added to them. What I like about this recipe is that it is so basic you really get to experience the beets. Just remembered what my grandmother used to do with the left over juice once the pickles were gone. She stuck hard boiled shelled eggs in to soak. I thought they tasted good but when you sliced them open! The combination of the yellow yolk and the purple white was a bit hard on the eyes!
